A stand selling chillies in the Mercado San Juan, in Mexico City. Many different varieties of chilli peppers are used in in Mexican cooking. Dried chillies often have a different name from the fresh variety and in terms of spicy hot, they range from the mild chile poblanos to the extremely fiery Habanera chillies.
